Yam & Cream Cheese Salad
A fabulous alternative to potato salad, this yam and cream cheese salad recipe will be a hit at your next barbeque.
This Yam salad is a fresh change from the traditional potato salad we all know. It's an easy side dish that goes with any kind of meal. It's also super easy to make.
The addition of cream cheese sets it apart from any other root vegetable salad dish of its kind. And it's so meaty it can stand on its own, as a main, or for quick snack.
Not only is it healthy, it's low in carbohydrates. This recipe is completely vegan friendly if using vegan cream cheese, other-wise it's suitable for ovo-lacto vegetarians.
This is by far my springtime and summertime favourite side dish.
Ingredients
(Makes 8 servings)
2 lbs. yams (cut into 1 inch cubes, 5 cups)
1/2 cup radishes, finely chopped
4 green onions, sliced
6 pickles, diced
3 celery stalks, diced
1/4 cup light cream cheese, vegan and lactose-free if required
3 dashes tabasco sauce
Directions
In a large pot, steam the yams until tender.
In a large bowl add the yam and mash leaving some chunks intact. Add radishes, green inions, pickles and celery mixing the ingredients thoroughly.
Add the cream cheese and tabasco sauce and mix well to combine.
Serve chilled. Enjoy.
