Tahini Dressing
Light and creamy tahini dressing, perfect for all sorts of salads.
I love a dressing that is richly flavoured and creamy with a hint of heat, just like this tahini dressing.
If you're not familiar with tahini, it is simply sesame seeds ground into a sauce/paste. It combines well with savoury elements like garlic and mustard, as well as fresh citrus. This is what makes it perfect for dressings and use in dishes like hummus.
This dressing is vegan, gluten-free and goes well on hearty salads like my raspberry and broccoli salad.
Ingredients
(Makes 12 servings)
1/2 cup tahini
1/2 cup avocado oil
1/4 cup cold water
1/2 small shallot, finely chopped
juice of 1 large lemon
1 clove garlic, minced
1 tablespoon Dijon mustard
1 tablespoon maple syrup
1/4 teaspoon ancho chili powder
1/4 teaspoon sea salt
1/4 teaspoon ground black pepper
Directions
Place the ingredients into a blender (bullet blender, or high-powered blender with blending cup, etc.) and blend until the ingredients are fully combined and the oil has emulsified.
Store in an airtight container in the refrigerator for up to 5 days. Drizzle on salads as desired.
