Pasta Piccante e Cavolfiore al Limone

Bursting with flavour this pasta piccante e cavolfiore al limone recipe (spicy pasta and lemon cauliflower) is a must try for pasta lovers.


This pasta dish is full of flavour combos from Thai chili pepper to lemon zest, mushrooms and zucchini; it is amazingly tasty and popular amongst pasta lovers.


This easy pasta dish uses lemon zest and lemon juice to awaken your taste buds. The Thai chili gives it a bit of a kick. The cauliflower is anything but boring when you add parmesan cheese and all of the other ingredients. Prepared in under 15 minutes it makes a perfect main dish when you're in a hurry. Pair this dish with a tossed garden salad.


This recipe is completely vegan friendly, and low in calories. I use macaroni pasta; however, you can substitute it with another type of pasta if desired.


This dish is so rich in flavour. I hope you love it as much as I do.

 

Ingredients

(Makes 4 servings)

  • 1 medium cauliflower, cut into small florets

  • 2, 1/2 cups gluten free macaroni pasta

  • 4 tablespoons extra virgin olive oil

  • 2 cloves garlic, very finely minced

  • 1 shallot, diced

  • 1 small zucchini, cut into small matchsticks

  • 1/2 cup cremini mushrooms, diced

  • 1 red Thai chili pepper, diced

  • juice of 1/2 lemon

  • 4 tablespoons fresh Italian parsley, chopped

  • zest of 1 lemon

  • 1/2 cup dairy-free Parmesan cheese

 

Directions

In a medium pot over high heat, fill 3/4 with water and bring to a boil. Add the cauliflower and cook for 2 minutes. Transfer cauliflower to a bowl using a slotted spoon and set aside.


Bring water back to a boil and cook pasta according to package instructions.


In the meantime, in a large sauté pan over medium-high heat, heat the extra virgin olive oil. Add garlic, shallot, zucchini, mushrooms and Thai red chili pepper. Cook for 3 minutes ensuring the garlic doesn’t burn.


Add cauliflower florets, pasta, lemon juice and Italian parsley. Cook for 2 minutes, mixing well.


Add lemon rind and grated parmesan cheese.


Serve with a drizzle of extra virgin olive oil (optional). Enjoy.
