Raspberry Vinaigrette
A wonderful raspberry vinaigrette recipe for your favourite green salads.
Making vinaigrettes at home is a really simple process. With a few cups of fresh fruit, a neutral oil and some vinegar, you can quickly have a delicious dressing for any green salad.
In this recipe I've taken fresh raspberries and whipped up a sweet yet tangy dressing that really can go on pretty much any salad.
If you don't have fresh raspberries on hand, try using fresh strawberries or blackberries with white wine vinegar instead of red. For a sweeter dressing add a few drops of maple syrup or honey.
Ingredients
(Makes 16 servings | Serving size = 2 tablespoons)
2 cups fresh raspberries
1/2 cup avocado oil
1/4 cup red wine vinegar
2 tablespoons shallot, finely diced
1 teaspoon Dijon mustard
pinch salt
pinch ground black pepper
Directions
In a food processor, or high-powered blender, add all the ingredients and process until smooth.
Serve over your favourite salad.
