Potato Kugel
A crisp yet tender potato kugel recipe that can be enjoyed any time of year.
Potato kugel is a wonderful side dish any time of year, but it's most popular during Passover celebrations in Eastern European Jewish cooking. This dish is delicious with a crispy outside and soft inside that is perfect alongside roasted meats or other mains.
This kugel recipe is gluten-free, dairy-free and perfect for ovo-lacto vegetarians.
I normally choose to add zucchini when I make kugel, but most vegetables also work well. For a little more colour, try adding grated carrots. I also enjoy this dish with the addition of grated parsnip or turnip.
TIP: To ensure the kugel is done, insert a knife or skewer into the centre. If it comes out clean, the kugel us ready.
Ingredients
(Makes 16 servings)
8 medium white or yellow potatoes, grated
2 medium zucchini, grated
2 medium sweet onions, grated
6 large eggs
1/2 cup avocado oil
1/4 cup cassava flour
1 tablespoon kosher salt, plus more to sweat the vegetables
1 teaspoon ground black pepper
Directions
Preheat oven to 400°F / 200°C, and spray a deep 9-inch x 9-inch casserole dish with calorie-free cooking spray. Set aside.
Over a large bowl fit a sieve large enough to hold the grated vegetables. In a separate bowl, add the grated potatoes, zucchini, and onions, then sprinkle with salt and toss together. Transfer the vegetables to the sieve and allow to sweat for 15 minutes.
Meanwhile, is a separate large bowl, add the eggs, oil, flour, salt and ground black pepper, then whisk until the mixture is well combined. Set aside.
After 15 minutes, compress the potato mixture to squeeze out as much liquid as possible. Transfer the grated vegetables into the egg mixture. Mix thoroughly to ensure the egg mixture is evenly distributed throughout.
Transfer into the prepared casserole dish, smooth off the top, and bake until the kugel is golden brown (about 1 hour).
Remove from the oven and allow to cool in the casserole dish for about 15 minutes before cutting the kugel into squares and serving.
