Poppy Sesame Dressing
Sweet yet tart poppy sesame dressing for summer salads.
Apple cider vinegar provides for a sweet-tart dressing that works well on salads that contain fruit. The addition of poppy and sesame seeds adds a subtle flavour, which helps balance the vinegar.
It's important to use a neutral flavoured oil in this dressing as the flavour of the oil will impact the final result. This is why I call for a light vegetable oil, but light-flavoured extra-virgin olive oil will also work.
This dressing is particularly tasty on my Strawberry Pasta Salad, or a simple strawberry spinach salad.
Ingredients
(Makes 12 servings)
1/2 cup light vegetable oil
1/2 cup apple cider vinegar
1/4 cup monk fruit sweetener (or granulated sugar)
1 tablespoon poppy seeds
1 tablespoon sesame seeds (black or white)
Directions
In a medium mixing bowl whisk together the ingredients. Store in an airtight container in the refrigerator for an hour. Whisk again prior to using.
