Peanut Butter Cacao Energy Balls

Try these peanut butter cacao energy balls for a mid-afternoon energy boost.


Easy to make and packed with energy-boosting goodness, these peanut butter cacao nib energy balls will get anyone through a long, busy day.


Loaded with protein and fibre, it only takes one to ward off any afternoon cravings, but low enough in calories having a second won't bring on any pangs of guilt.


I like to munch through a couple of these with my afternoon tea and share with friends. Because they are gluten-free and vegan, almost anyone can enjoy them, except those with nut allergies.


If you have any difficulties getting this to stick together, just add in a little more honey to increase moisture and stickiness.

 

Ingredients

(Makes 24 servings)

  • 1 cup old fashioned rolled oats

  • 1/2 cup cacao nibs, chopped (or mini chocolate chips)

  • 1/2 cup unsweetened coconut flakes

  • 1/2 cup flaxseed meal

  • 1/2 cup peanut butter, smooth

  • 1/4 cup honey

  • 1 tablespoon chia seeds

  • 1 tablespoon hemp hearts

  • 1 tablespoon whole flaxseeds

  • 1 teaspoon pure vanilla extract

 

Directions

Using a food processor, combine all the ingredients listed and pulse until thoroughly mixed. Remove the blade, cover and refrigerate for 1 hour.


Using a medium cookie scoop (or spoon) scoop out a portion of the mixture and roll it into a ball with clean hands. Repeat until with the remaining mixture.


Store in an airtight container in the refrigerator for up to 10 days. Enjoy as desired.
