Peach Salsa
Serve sweet summertime peach salsa as a dip or spread.
This peach salsa has a wonderful sweet-heat quality that makes it as delicious on burgers and wraps as it is as a dip with taco chips.
I love using seasonal fruits and vegetables whenever available. They add a freshness to every dish, and that is crucially important to this salsa. So, if it's possible, swap the frozen peaches and cream corn with fresh grilled corn to really bring out the flavours.
If peaches aren't your favourite fruit, try swapping them and making this a plum or nectarine salsa.
TIP: Any stone fruit can be used in place of or in combination with peaches, including nectarines and plums.
Ingredients
(Makes 8 servings)
2 large peaches, diced
1 cup peaches and cream corn, thawed
1 small red onion, diced
1 red bell pepper, diced
1 jalapeño pepper, diced
1 avocado, diced
1/4 cup fresh cilantro, finely chopped
2 tablespoons extra virgin olive oil
juice of 1 lime
1/2 teaspoon chili powder
1/2 teaspoon salt
1/4 teaspoon ground black pepper
Directions
In a mixing bowl, combine all of the ingredients, mixing well.
Cover and refrigerate for 1 to 2 hours prior to serving.
Uncover, mix, then taste and adjust seasoning if needed. Serve.
