Peach & Blueberry Salad

Crunchy, fresh and sweet peach and blueberry salad is the perfect summer side salad.


This peach and blueberry salad is a combination of sweet, ripe fruit, fresh greens, pecan crunch, and feta cheese. With its varied textures it makes a lovely side salad with grilled meats, or a satisfying lunch.


The dressing I prefer to use with this salad is my blueberry thyme vinaigrette, but any fruit-based vinaigrette will work well.


Suitable for ovo-lacto vegetarians, or vegans if the feta is swapped for vegan feta or omitted.

 

Ingredients

(Makes 4 servings)

  • 2 peaches, sliced

  • 2 cups blueberries

  • 2 cups baby spinach

  • 1 cup red leaf lettuce

  • 1/2 cup pecan halves

  • 1/2 cup light feta cheese, crumbled

  • fresh basil (optional)

 

Directions

In a large salad bowl combine the ingredients and toss immediately prior to serving.


Drizzle individual bowls with your favourite vinaigrette. For this salad, I recommend my blueberry thyme vinaigrette.
