Parmesan Roasted Asparagus

A perfect side dish, this parmesan roasted asparagus recipe does well with almost every main.


Spring time is a great time to enjoy fresh produce with asparagus being one of them. The long slender shoots with a bushy head is often misunderstood.


Chock full of vitamins and nutrients it can be added as a side to any meal adding great taste and texture. Long gone are the days of complicated boiling and blanching, this recipe calls for dressing up the asparagus right on a sheet pan and throwing it into an oven before your accompanying meal is ready.


Takes just 15 minutes to roast and voila a flavourful side dish!

 

Ingredients

(Makes 4 servings.)

  • 1 bunch asparagus (thinner ones are more delicate in flavour)

  • 1 tablespoon extra virgin olive oil

  • 1/4 teaspoon salt

  • 1/4 teaspoon ground black pepper

  • 2 tablespoons parmesan cheese

  • 1/2 teaspoon garlic powder

  • 1/4 teaspoon red pepper flakes (optional)

  • 1 tablespoon Panko breadcrumbs

 

Directions

Preheat oven to 400°F / 200°C and line a sheet pan with parchment paper, foil, or silicone baking mat.

Prepare the asparagus snapping off the bottom ends that may be tough to eat. Bottoms should snap off easily without much effort. Discard the ends.


Place the asparagus in a bowl and sprinkle with the rest of ingredients. Massage to ensure the ingredients are evenly coating the asparagus.


Arrange asparagus in a single layer on the sheet pan and place on the oven's top rack for 10 to 15 minutes.


Asparagus may char slightly. Serve immediately.
