Overnight Oats
Lusciously creamy overnight oats recipe that is infinitely customizable.
When your day starts off in a rush there is nothing better than having a delicious, grab-n-go breakfast already made in the fridge. My favourite is overnight oats (a.k.a. Bircher muesli). Simple to make and easy to take on the go.
This recipe provides for just the base oat mixture. It makes the perfect backdrop to any additional ingredients you want to add.
Overnight oats can be customized in so many ways, I just can't count. That means there's no getting tired of the same old flavours. Any combination of fruit, nuts, seeds, sauces, jams, etc. can lead to a brand-new favourite flavour combination.
Ingredients
(Makes 6 servings)
2 cups old fashioned rolled oats
2 cups 2% milk (can be lactose-free, nut milk, or other dairy-free)
1 cup low-fat Greek yogurt (can be lactose-free or dairy-free)
1/4 cup chia seeds
1/4 cup maple syrup
1/8 cup hemp seeds
1 teaspoon pure vanilla extract
1/2 banana, sliced (optional)
Directions
In a mixing bowl combine all the ingredients and mix well.
Cover the bowl and store in the refrigerator overnight, or transfer into smaller, airtight jars for individual portions to take on the road.
The next morning, serve with sliced banana, or your favourite fruit (optional).
