Monster Eyes
Creepy monster eyes make the best breakfast on Halloween morning.
Delicious pancakes wrapped around a slice of banana with a layer of your favourite nut butter, topped with a creepy eye for Halloween breakfast.
Monster eyes are quite easy to make, and utilizing my recipe for Estonian pancakes, they come together quickly as well.
If you don't have candy eyes, or want to cut back on the sugar, try cutting out a small hole in the banana big enough to hold a blueberry pupil, or slice a marshmallow into thin rounds and colour a dark pupil with food colouring or melted chocolate.
Ingredients
(Makes 4 servings)
4 bananas
1/2 cup nut butter (or jam, or chocolate spread)
16 candy eyes (optional)
Directions
Prepare a 1/2-batch of the Estonian pancakes as directed. Spread a thin layer of your preferred nut butter on one side of the pancakes. Place a peeled banana onto the pancake and roll it up. Slice off the tapered ends (discard offcuts or enjoy).
Cut the rolled pancake into 1-inch pieces and turn up onto the cut ends. Use a skewer to secure two pieces together.
Optional: Affix a candy eye to each or see the blog post above for other alternatives.
Serve and enjoy.
