Mashed Potatoes & Gravy

Creamy and smooth mashed potatoes and gravy is a must-have side to any holiday dinner.


Thick and creamy mashed potatoes with savoury chicken gravy is a must for any dinner featuring poultry. Perfect for holiday dinners like Thanksgiving and Christmas with roast turkey, chicken, or ham.


Other vegetables can also be added and mashed with the potatoes, like cauliflower, carrots, and turnips, which will lead to a more complex flavour. However, be careful of the ratio of other vegetables to the potatoes as the added vegetables can make the mash too watery if overdone.


This same technique for making gravy can easily be adapted for other mains, just replace the chicken stock with beef stock, vegetable stock, mushroom stock, etc. Whichever best matches the meal.

 

Ingredients

(Makes 8 servings)


mashed potatoes:

  • 8 large white potatoes, peeled and quartered

  • 2 teaspoons sea salt

  • 2 tablespoons butter

  • 1/2 cup whole milk

gravy:

  • 2 tablespoons butter

  • 1 tablespoon gravy flour

  • 1 cup chicken stock

  • 1/4 teaspoon ground black pepper

  • sea salt to taste

 

Directions

In a large pot over medium-high heat, add the potatoes and cover with cold water. Sprinkle with sea salt and bring to a boil. Boil until fork tender (about 20 to 25 minutes). Turn off heat and drain the water from the potatoes. Replace the pot on the hot element and agitate to steam off excess water. Using a potato masher (or ricer) begin breaking up the potatoes. Add the butter, and as it melts, mash it into the potatoes. Add the milk and continue mashing until smooth.


As the potatoes boil, prepare the gravy. In a saucepan over medium-high heat, add the butter and melt. Sprinkle in the gravy flour and mix until combined. Cook the flour and butter mixture for at least a minute to cook off the flour taste while continually stirring. begin adding the chicken stock a little at a time and mix until smooth. Add ground black pepper and sea salt to taste. Reduce heat to medium and cook until the gravy thickens. Using additional chicken stock or gravy flour, adjust the gravy to the thickness desired.
