Mango Salsa
With just the right amount of sweet and heat, this mango salsa recipe will go great with your favourite Tex-Mex meal.
Mangos are one of my favourite fruit. Thankfully, they are really high in nutrients because I love finding ways of adding them to recipes. While mango salsa isn't new, it does feature this wonderful fruit prominently.
The sweet mango with the heat from the chillies is just the perfect combination for all sorts of Mexican, Tex-Mex and Mexican-inspired recipes that call for regular tomato salsa. I've been known to tuck a spoonful in my Birria Tacos, and I also love this alongside samosas and other Indian dishes.
It is fast and simple to make, just let it rest in the refrigerator for about an hour to let the flavours mingle before serving.
Ingredients
(Makes 12 servings | Serving size = 1/4 cup)
2 cups mango, diced
1 small red onion, finely diced
1/2 red bell pepper, finely diced
1/3 cup fresh cilantro, roughly chopped
1 clove garlic, minced
1 jalapeño pepper, deseeded and finely chopped
1 red chili pepper, deseeded and finely chopped
juice from 1 lime
3 tablespoons fresh orange juice
salt and ground black pepper to taste
Directions
In a large mixing bowl, combine all the ingredients and mix well.
Transfer to an airtight container and refrigerate for an hour prior to serving.
