Macaroni Goulash

An easy mid-week meal, macaroni goulash hits all the flavour points and gets you out of the kitchen fast.


Al dente macaroni engulfed in a rich and meaty tomato sauce. This is a one-pot meal that is easily made on stovetop in under 30 minutes, or in an Instant Pot for delayed cook time.


While this recipe calls for macaroni, any kind of pasta will do. Just try to pick one the sauce can cling onto. Or use a type that is gluten-free if needed.


If this dish needs to be vegan, try using plant-based ground beef and vegan cheddar alternatives along with vegetable broth instead of chicken.

 

Ingredients

(Makes 6 servings)

  • 1 tablespoon extra-virgin olive oil

  • 1 medium sweet onion, diced

  • 1 red chili pepper, deseeded and finely chopped

  • 2 cloves garlic, minced

  • 1lb ground beef

  • 1 teaspoon Italian seasoning

  • 1/2 teaspoon sea salt

  • 1/2 teaspoon ground black pepper

  • 2 tablespoons tomato paste

  • 1 can (796ml) low-sodium tomatoes, diced

  • 1 jar (396g) tomato sauce

  • 1 cup low-sodium chicken broth (or beef broth, or vegetable broth)

  • 1, 1/2 cups macaroni, uncooked (gluten-free if needed)

  • 1 cup medium cheddar cheese, grated

 

Directions

In a large pot or Dutch oven over medium-high heat, add the extra-virgin olive oil. Once the oil is hot, add the diced onion and red chili pepper, then sauté until the onion becomes soft and translucent (about 5 to 7 minutes). Add the garlic and sauté for an additional minute. Add the ground beef along with the Italian seasoning, sea salt, and ground black pepper. Sauté the meat until it is browned (about 10 to 12 minutes or until no more pink shows).


Add the tomato paste and combine well with the meat. Add the diced tomatoes and stir to combine. Pour in the tomato sauce, chicken broth, and macaroni, mix well then bring to a simmer. Reduce the heat slightly if needed to maintain simmer and cook, stirring occasionally, until the pasta is al dente and the liquid has reduced (about 15 minutes).


Add the cheddar cheese and stir well. Remove from heat and serve.
