Jack-O-Peppers
Salad can't get much spookier than this Jack-O-Peppers recipe.
A fun way to celebrate Halloween and still get in enough vegetables. Sweet bell peppers make the perfect stand in as Jack-O-Lanterns, complete with scary faces. However, these spooky peppers are for eating not setting ablaze.
All you need is a quick simple salad and they are ready to serve. I've used a spring mix of greens and a few additional vegetables, but any salad veggies will do. Try to pick a mix of greens that will puff out of the tops like spooky monster hair for full effect.
If the goal is low-carb, skip the optional croutons. I like to use a light lemon vinaigrette as dressing.
Ingredients
(Makes 4 servings)
4 sweet bell peppers (red, yellow, orange, and or green)
2 cups spring mix greens
1/2 cup cucumber, diced
8 cherry tomatoes, halved
1/2 cup croutons (optional)

Directions
Wash peppers thoroughly and pat dry. With a sharp knife, carefully cut scary Jack-O-Lantern faces into the sweet bell peppers. Cut off stem top and clean out the seeds and white pith. If needed, trim a thin layer from the bottoms of the peppers to flatten them out and help them stand. Careful not to cut too much.
In a small bowl prepare the lemon vinaigrette.
Into the bottom of the bell peppers, add 1/4 of the cucumber and 4 cherry tomato halves. Top with greens so that they stick out like wild hair. Add a few croutons to each and drizzle with vinaigrette. Serve.
