Grilled Honey Balsamic Pineapple
Sweet and a little tangy, this grilled honey balsamic pineapple recipe makes a fabulous side dish.
Sweet pineapple rings grilled until their natural sugars deepen and caramelize are so darn delicious. Add to that a slight tang from the honey balsamic sauce and these make an incredible side dish to just about anything.
Best of all, they are so simple and fast to make, especially if you're grilling up something special for Canada Day or 4th of July celebrations. If you have a grilling pan or an indoor smokeless grill, you can make these any time of year.
I've been known to be a tad lazy on occasion and usually buy pineapples already peeled and cored from the market. It's more expensive this way, but it cuts the prep time and clean-up to almost nothing.
These are, of course, completely gluten-free, dairy-free, and sugar-free. If you swap the honey for a bee-free alternative, like yacon syrup, they are also vegan.
TIP: You can grill these up without the balsamic reduction then chop them up and use it as a topping for breakfast oatmeal, desserts or pizza, or use them in other recipes that call for fruit.
TIP: Spice up the pineapple by using a hot chilli infused honey.
Ingredients
(Makes 6 servings)
1 pineapple, cored and sliced into 6 rings
1/4 cup honey (or vegan honey)
1/4 cup balsamic reduction
Directions
In a small bowl, mix honey and balsamic reduction until combined.
Brush pineapple slices with honey balsamic mixture and place in a shallow bowl or plate. Pour any remaining honey balsamic mixture over the pineapple. Cover and allow to marinade for about 30 minutes.
Prepare outdoor grill, grill pan, or smokeless indoor grill by heating to high and lightly brushing with extra virgin olive oil.
Place pineapple slices on the grill and cook, flipping when needed, until the pineapple is tender and evenly browned on both sides. Remove from grill and serve.
