Fruit Salad
A happy, summery fruit salad recipe is just the thing for outdoor gatherings.
A fresh fruit salad is just happiness in a bowl. It is a collection of the best Mother Nature has to offer and I don't know many people that will turn down a good fruit salad.
This fruit salad is a wee bit boozy, but it doesn't have to be. If you don't want to include alcohol, substitute the Triple sec with fruit syrup or concentrated fruit juice will work fine. Try to select a juice belonging to one of the fruits included in the salad.
This recipe is of course very adaptable to whatever fruits you have on hand, making it a great option for fruits that need to be used asap. However, if using bananas or apple, I would recommend adding them in just before serving as they tend to go too soft if left standing too long in spirits.
Ingredients
(Makes 12 servings)
1/4 cup Triple sec (or Cointreau, Grand Marnier or other fruit-flavoured liqueur)
zest of 1 large lemon, grated
2 tablespoons sugar
2 cups strawberries, sliced
1, 1/2 cups seedless red grapes, halved
1 cup blueberries, whole
1/2 cup pineapple, small chunks
1 large orange, supremed and chopped
1 fresh mango, peeled and chopped
3 kiwi, peeled and sliced
Directions
In a small bowl combine the Triple sec, lemon zest and sugar. Stir until the sugar dissolves. Set aside.
In a salad bowl, add the prepared fruit and gently mix. Pour the Triple sec mixture over the fruit and toss to combine.
Cover the bowl with clingwrap and refrigerate for about an hour, giving it a gentle mix every 10 to 15 minutes. Give it a last mix immediately prior to serving.
