Cajun Seasoning
Wonderful Cajun seasoning for all your gumbos and jambalayas.
I love to mix my own spices and seasoning blends whenever possible. It helps control exactly what is added to the dishes I prepare. Often, store-bought blends have additives to help the mix retain its freshness a little longer, or an ungodly amount of salt, msg, and even sugar. Those are not needed. Just mix a small batch of your own spices and it will be used up before it has a chance to go stale.
Mixing your own blends also helps you go through your stock of individual spices quicker, so they can be replaced with fresh before they lose their potency.
Ingredients
(Makes 15 servings)
3 teaspoons paprika
2 teaspoons dehydrated garlic
2 teaspoons dehydrated onion
1, 1/2 teaspoons dried oregano
1, 1/2 teaspoons dried thyme
1 teaspoon fennel seed, crushed
1 teaspoon ground coriander seed
1 teaspoon chili powder
1 teaspoon ground black pepper
1 teaspoon cayenne pepper
Directions
In a medium mixing bowl, mix together all of the ingredients listed until thoroughly combined. Store in an airtight container and use as needed.
