Buchu Muchim

Buchu Muchim is a Korean garlic chive salad that makes a lovely, flavourful side dish. A mix of tangy and sweet, with a hit of chili heat on a base of mild, fresh garlic chives.
This simple and easy salad goes very well with any main, but particularly a lean cut of beef, pork, or chicken.
Calorie-wise this side gives a huge punch of flavour for a scant amount of calories.
Chives have a pretty short shelf life, so they are best bought within a day of making this dish.
Ingredients
(Makes 4 servings)
2 cups garlic chives, chopped into 2-inch pieces
Dressing:
2 tablespoons tamari
1 teaspoon water
1 teaspoon Gochugaru (Korean Red Chili Pepper Flakes)
1 tsp sesame seeds
2 teaspoons Monkfruit sweetener
1, 1/2 teaspoons rice vinegar
1 teaspoon sesame oil
Directions
Place the cut and cleaned garlic chives into a salad bowl and set aside.
In a small mixing bowl, combine all the dressing ingredients, whisking well.
Pour the dressing over the garlic chives and toss. Garnish with additional sesame seeds and a pinch of additional Gochugaru.
Serve immediately and enjoy.
