Blueberry Thyme Vinaigrette
Sweet blueberry thyme vinaigrette is perfect on salads containing fruit.
Sweet blueberries with a hint of thyme combined with white balsamic vinegar to make a lovely vinaigrette that works well on salads containing fruit.
Try this dressing on my peach and blueberry salad, strawberry pasta salad, or watermelon salad.
Using a high-powered blender to make this vinaigrette, like a Vitamix, will effectively purée the blueberries and thyme so that it may not need to be passed through a sieve; however, I recommend passing the dressing through a sieve to remove any remaining solids.
Ingredients
(Makes 8 servings)
3 cups blueberries
4 sprigs fresh thyme, stems removed
1/4 cup white balsamic vinegar
1/4 cup cold water
1 tablespoon maple syrup
Directions
Place the blueberries, thyme, vinegar, water, and maple syrup into a high-power blender. Blend on high then strain over a sealable airtight container and discard the skins and pulp.
Drizzle over salads and enjoy.
Store in the refrigerator for up to 1 week.
