Black Forest Parfait

Healthy, yet sweet, this black forest parfait recipe makes a lovely dessert or snack.


This parfait is sure to make any lover of black forest cake smile. It has all of those black forest cake flavours melded into a great, lower-calorie treat. I've even been known to indulge in one of these parfaits for breakfast when all I want is something light and quick.


One of the tasty layers in a black forest cake is the cherry pie filling near the bottom. To mimic this, I use my recipe for cherry compote, but your favourite cherry jam or preserve will do.


If I really need a morning jolt, I use expresso to soak the bottom biscuit.

 

TIP: If you don't wish to make the compote from scratch, use your favourite whole-fruit cherry jam.

 

Ingredients

(Makes 2 servings)

  • 10 plain cocoa biscuits (gluten-free if needed), 2 whole biscuits and 8 crushed

  • 2 tablespoons black coffee, cooled

  • 1/4 cup cherry compote

  • 1/2 cup low-fat vanilla pressed Greek yogurt

  • shaved dark chocolate, to garnish (optional)

 

Directions

Place 1 whole cocoa biscuit into the bottom of 2, 8oz tumblers. Add 1 tablespoon of coffee into each glass and allow it to soak into the biscuit. Add a third of the cherry compote onto each biscuit, spread out the layer, and refrigerate for 30 minutes to chill thoroughly.


Into the glass sprinkle a layer of crushed biscuit, followed by a layer of yogurt, another layer of biscuit, a second layer of yogurt, and top with the remaining crushed biscuit and leftover compote. Add some chocolate curls for added garnish (optional).


Serve immediately.
