Barbecued Jalapeño Burgers
Slightly spicy, this barbecued jalapeño burger recipe adds a spark to a backyard summertime classic.
There's nothing quite like a juicy, savoury, homemade burger grilled to perfection. I love these burgers because they have a wee bit of a kick thanks to the jalapeños. However, the peppers can be omitted if you wish to keep your burgers more traditional.
There are three elements to producing a juicy, delicious burger:
Use meat that has at least 20% fat content. Do not use extra lean meat in this instance.
Be gentle with the meat while you're mixing and forming. Compressing the meat too much will result in hard burgers.
Do not overcook the patties, or touch them too much while they cook. Jostling the burgers forces the juices to seep out, as does overcooking.

Ingredients
(Makes 6 servings)
1lb ground chuck
1/2 small sweet onion, very finely minced
2 cloves garlic, very finely minced
2 tablespoons jalapeño pepper, deseeded and puréed (optional)
1 teaspoon salt
1 teaspoon ground black pepper
Directions
In a mixing bowl add the ground chuck, onion, garlic, and jalapeño. Very gently mix without compressing the meat too much.
Divide into 6 equal portions, and again being gentle, form the meat into patties. Into the centre of each patty, use your finger to make an indentation. This will help prevent the centre of the patties from plumping up too much while cooking.
Sprinkle with salt and pepper on both sides immediately before transferring the patties onto the grill.
Once on the hot grill, do not press on the patties, or flip them over too often. All this does is force out the juices. When you see the beef changing colour up the sides (about 4 to 5 minutes), then flip the patties over and cook for an additional 4 to 5 minutes, or until it reaches your preferred level of doneness.
Remove from the grill and let the patties rest for a few minutes before placing on toasted buns, dressing, and enjoying.
