Baked Potato Shrunken Heads
These baked potato shrunken heads make a creepy Halloween side dish that are sure to get a chuckle.
The perfect Halloween-themed side dish to go with dinner before the little ones hit the streets. After all, why have regular baked potatoes when these shrunken heads will perfectly suit the occasion? Even adult party guests will get a kick out of them.
These potatoes are simple to make. Just cut scary and startled faces into some russet potatoes before baking. Try to select medium potatoes that are similar in size and uniform shape.
The faces are great for capturing melted herb butter (try my garlic parmesan butter), or as a low-fat alternative, with homemade salsa or pico de gallo.
This recipe is completely vegan, dairy-free, and gluten-free.
Ingredients
(Makes 8 servings)
8 medium russet potatoes, washed and dried
1 tablespoon extra virgin olive oil
1/2 teaspoon sea salt
Directions
Preheat oven to 425°F / 220°C. Prepare a sheet pan lined with parchment paper then set aside.
Wash russet potatoes well then pat dry. Carefully cut surprised and spooky faces into the potatoes. Lightly rub each potato with extra virgin olive oil and sprinkle lightly with salt. Place the potatoes faces up on the sheet pan and bake until tender and the faces have shrunken in (about 45 minutes).
Remove from the oven and serve.
