Avocado & Rye Bread Toasts

Simple avocado and rye bread toasts make a lovely quick snack or breakfast.


Aromatic and mildly sweet rye bread generously smeared with herb goat cheese and loaded with avocado, arugula, and savoury sundried tomatoes. The natural and healthy fats from the avocado and the fibre from the rye bread are wonderfully satiating making the perfect snack or light breakfast.


When rye bread is toasted it takes on a lovely sweetness. If you can find sweet and sour rye bread, it's even better; however, light rye is typically easier to find in stores.


These toasts are suitable for ovo-lacto vegetarians.

 

Ingredients

(Makes 2 servings)

  • 2 slices light rye bread with caraway seeds, halved

  • 1/2 cup herbed goat cheese

  • 1/2 cup arugula

  • 1 avocado, destoned and sliced

  • 8 pieces sundried tomatoes

  • pinch sea salt

  • pinch ground black pepper

 

Directions

Spread sliced light rye bread (toasted optional) with herbed goat cheese. Add 3 or 4 slices avocado. Add 4 or 5 arugula leaves, and top with 2 pieces sundried tomatoes. Sprinkle lightly with sea salt and ground black pepper to taste.
