Avocado Franken-Toasts

Scary avocado Franken-Toasts for a tasty and cute Halloween breakfast recipe.


Halloween is one of my favourite holidays because it gives me an opportunity to make meals fun and a wee bit silly. Take these avocado Franken-Toasts, which make a great breakfast on Halloween morning. Why have plain avocado toast when these scary fellows await?


These are fine for ovo-lacto vegetarians, and are dairy-free. If you follow a gluten-free diet, select a suitable gluten-free bread. To make these vegan, omit the egg and replace with cucumber or zucchini rounds.


Though it ruins the aesthetic, I like to splash on a little balsamic vinegar when eating these toasts.

 

Ingredients

(Makes 2 servings)

  • 2 large eggs, hard boiled and sliced into rounds

  • 4 slices bread, toasted (gluten-free if needed)

  • 1/8 sweet red pepper, sliced into arched pieces

  • 8 large black olives, pitted

  • 2 small avocados, sliced, pit removed

  • juice of 1/2 a small lime

  • 1/4 teaspoon salt

In a small saucepan over medium-high heat, add water enough to fill the pan 3/4 and bring to a boil. Place a bowl of ice water nearby. Once the water is boiling, add a pinch of salt and lower the eggs into the water with a slotted spoon. Boil for 12 minutes. Remove the eggs from the water with a slotted spoon and immerse in ice water bath until cool enough to handle (about 10 minutes).


As the eggs cool, toast the bread to preferred level of golden brown.


Slice the sweet red pepper into smile-shaped pieces and set aside. Of the 8 olives, slice 4 into quarters, and slice the other 4 into rounds. Reserve 8 rounds and cut the remining rounds into smaller pieces to be used as the scars.


In a small mixing bowl, scoop the avocado out of the skins, add the salt and lime juice then mash well with a fork. Cover with clingwrap, pressing the wrap onto the surface of the mashed avocado. Set aside.

With the eggs cooled, peel off the shells and slice into rounds.


To assemble, spread the avocado onto teach slice of toast. Add 1 quartered olive (4 quarter pieces) onto the tops of each slice of bread as hair. Place 2 rounds of egg onto each slice of toast for eyes with rounds of olive on top of the egg as pupils. Give the Franken-Toast a sweet red pepper smile and arrange the remaining olive pieces into scar shapes with one long piece and six smaller pieces placed perpendicularly.


Serve and enjoy.
